Units:

Main

  • 2 kg beef brisket, whole

    Trimmed of excess fat

  • 2 tbsp Applewood Chipotle spice rub

Or homemade spice blend of choice

Method

  1. 1

Pat the brisket dry with kitchen paper and place on a clean work surface.

    ~5 mins
  2. 2

Generously apply the Applewood Chipotle spice rub all over the brisket, coating evenly on all sides.

    ~5 mins

Tip: Press the rub in gently so it adheres well

  3. 3

Optional: Brown the brisket in a hot frying pan for 2–3 minutes per side for extra flavour depth. This step can be skipped if you're going for maximum convenience.

    ~10 mins
    Optional step
  4. 4

Place the seasoned brisket into your crock-pot or slow cooker.

    ~2 mins

Tip: No liquid needed—the brisket will release its own juices

  5. 5

Cover and cook on Low for 8 hours, or on High for 5 hours. The brisket is done when it's tender and shreds easily with a fork.

    ~8 hrs

Tip: Avoid opening the lid during cooking as this releases heat and extends cooking time

  6. 6

Remove the brisket carefully and allow to rest for 10 minutes before slicing. Slice against the grain for maximum tenderness.

    ~15 mins

Tip: Serve with the pan juices spooned over the top

Frequently Asked Questions

Yes, absolutely! You can rub the brisket with the spice blend the evening before, cover it, and refrigerate overnight. In the morning, simply pop it into the slow cooker and cook. This actually allows the flavours to penetrate the meat more deeply
