Ingredients
Ribs
- 1360 g baby back ribs, membrane removed if desired
- to taste salt
- to taste black pepper, freshly ground
BBQ Sauce
- 480 ml BBQ sauce
Use your favourite shop-bought or homemade BBQ sauce
- 50 g brown sugar
Soft light or dark brown sugar both work well
- 60 ml cider vinegar
- 3 tsp dried oregano
- 1 tsp Worcestershire sauce
- 1 tbsp cayenne pepper
Reduce to 1 tsp if you prefer less heat
- 1 tbsp chilli powder
Method
- 1
In a bowl, combine the BBQ sauce, brown sugar, cider vinegar, dried oregano, Worcestershire sauce, cayenne pepper, and chilli powder. Mix well until fully combined.
~5 mins - 2
If your rack of ribs still has the membrane on the underside, peel it off for more tender results. Season the ribs generously with salt and pepper on both sides.
~5 minsTip: Removing the membrane allows the sauce to penetrate the meat better and gives a more tender finish.
- 3
Place the seasoned ribs into your slow cooker. You may need to cut the rack into sections to fit. Pour the BBQ sauce mixture over the ribs, ensuring they are well coated.
~5 minsTip: Stand the ribs up along the sides of the slow cooker if they won't lie flat.
- 4
Cover and cook on Low for 8 hours or High for 4 hours, until the meat is tender and pulling away from the bones.
- 5
Once cooked, carefully spoon the BBQ sauce from the bottom of the slow cooker over the ribs to glaze them. Gently remove the ribs and cut into individual portions.
~5 minsTip: For a caramelised finish, you can optionally place the ribs on a baking tray, brush with extra sauce, and grill under a hot grill for 3โ4 minutes.
- 6
Serve the ribs with extra BBQ sauce from the slow cooker on the side. Enjoy!

Frequently Asked Questions
Absolutely. Spare ribs work wonderfully in the slow cooker too. They may take a little longer to become tender, so stick with the low 8-hour setting for best results. Spare ribs tend to have more fat and connective tissue, which means even more flavour.
