Method
- 1
Place all the prepared vegetables (carrots, potatoes, green beans, onion, and minced garlic) into your slow cooker and season generously with salt and pepper.
~5 minsTip: Ensure vegetables are cut into fairly even-sized pieces so they cook uniformly
- 2
Season the chicken breasts on both sides with Italian seasoning, garlic powder, cayenne, salt, and pepper.
~5 minsTip: For enhanced flavour, you can optionally brown the chicken breasts in a hot frying pan with a little olive oil for 2-3 minutes each side before adding to the slow cooker
- 3
Place the seasoned chicken breasts on top of the vegetables in the slow cooker.
~2 mins - 4
In a medium bowl, whisk together the soy sauce, honey, ketchup, olive oil, Italian seasoning, red pepper flakes, cayenne pepper, onion powder, garlic powder, salt, and pepper until well combined.
~5 minsTip: Whisk thoroughly to ensure all ingredients are evenly distributed
- 5
Pour the honey garlic sauce over the chicken and vegetables, ensuring the chicken is well coated.
~2 mins - 6
Cover the slow cooker and cook on high for 3 to 4 hours, or on low for 6 to 7 hours, until the chicken is cooked through and the vegetables are tender.
~3 hrs 30 minsTip: Cooking time will vary depending on the thickness of your chicken breasts and the size of your vegetables. The chicken should reach an internal temperature of 75°C (165°F)
- 7Optional step
If you prefer a thicker sauce, whisk the cornstarch with cold water to create a slurry, then stir it into the slow cooker during the final 30 minutes of cooking.
~30 minsTip: This step is optional—the sauce will naturally thicken somewhat during cooking
- 8Optional step
For extra flavour and texture, you can carefully remove the cooked chicken breasts, place them on a baking tray, and grill under a medium-high grill for 2-3 minutes until lightly charred, then return them to the slow cooker until ready to serve.
~5 minsTip: This optional step adds a nice finish and extra depth of flavour

Frequently Asked Questions
Yes, absolutely. Chicken thighs are actually excellent for slow cooking as they remain juicier and more forgiving if slightly overcooked. You may need to add an extra 1-2 hours to the cooking time on low, or an extra 30 minutes to an hour on high, depending on the size of the thighs. Check that the meat is tender and falls away from the bone easily
