Method
- 1
Prepare the vegetables: cut the carrots into 5cm chunks, halve the baby potatoes if large, trim the green beans, and cut the onion into chunks. Set aside.
~10 minsTip: Having everything prepped before you start makes assembly easier
- 2
Season the chicken breasts on both sides with garlic salt and Italian seasoning.
~2 mins - 3Optional step
Optional but recommended: heat olive oil in a large frying pan over medium-high heat. Brown the chicken breasts for 3–4 minutes per side until golden. This adds extra depth of flavour. Transfer to a plate.
~10 minsTip: Browning is not essential for slow cooking, but it enhances the final dish
- 4
In a small bowl, whisk together the minced garlic, oregano, basil, red pepper flakes, soy sauce, honey, and ketchup to make the sauce.
~5 minsTip: Mix well until the honey is fully incorporated
- 5
Place the prepared vegetables in the bottom of your slow cooker pot.
~3 minsTip: Layering vegetables at the bottom helps them cook evenly
- 6
Arrange the chicken breasts on top of the vegetables.
~2 mins - 7
Pour the honey garlic sauce over the chicken and vegetables, ensuring everything is well coated.
~2 minsTip: Stir gently to distribute the sauce evenly
- 8
Cover the slow cooker and cook on Low for 8 hours or High for 5 hours. The chicken should be tender and cooked through (internal temperature 75°C), and the vegetables should be soft but still holding their shape.
~8 hrsTip: Do not lift the lid unnecessarily during cooking—this extends cooking time
- 9
Taste the dish and season with additional salt and black pepper if needed, remembering that the soy sauce is already quite salty.
~2 mins - 10Optional step
Garnish with fresh chopped parsley just before serving.
~1 minTip: Fresh parsley adds brightness and colour to the finished dish
