Chicken & Vegetables

  • 3 breasts Large chicken breasts

    Approximately 800g–1kg total weight

  • 14 potatoes Baby potatoes, left whole or halved if large

    Approximately 400g

  • 25 stalks Green beans, trimmed

    Approximately 250g

  • 6 medium Carrots, cut into chunks approximately 5cm long

    Approximately 500g total

  • 1 onion Large onion, cut into chunks

    Approximately 200g

Seasoning

  • 5 ml Garlic salt
  • 5 ml Italian seasoning
  • 0 to taste Salt and black pepper

    Use sparingly—the sauce and garlic salt are already quite salty

Base

  • 30 ml Olive oil

    For searing the chicken (optional but recommended)

Honey Garlic Sauce

  • 4 cloves Garlic cloves
    , minced or finely chopped
  • 5 ml Oregano
  • 5 ml Basil

    Dried basil; or use fresh and add in the final 30 minutes

  • 1 ml Red pepper flakes

    Adjust to taste for desired heat level

  • 60 ml Soy sauce
  • 120 ml Honey
  • 60 ml Ketchup

Garnish

  • 15 g Fresh parsley
    , finely chopped(optional)

    Add just before serving to maintain colour and fresh flavour

    Prepare the vegetables: cut the carrots into 5cm chunks, halve the baby potatoes if large, trim the green beans, and cut the onion into chunks. Set aside.

    Season the chicken breasts on both sides with garlic salt and Italian seasoning.
