Ingredients

Servings:
4
Units:
  • 1 whole pork tenderloin, trimmed

Approximately 700โ€“900g (25โ€“32 oz); browning first is optional but recommended for deeper flavour

  • 4 medium carrots, peeled and cut into chunks

    Roughly 450g (16 oz) total

  • 5 medium potatoes, peeled and cut into chunks

Roughly 600g (21 oz) total; waxy potatoes work best

  • 1 large onion, peeled and cut into chunks

    Roughly 200g (7 oz)

  • 240 ml water or vegetable stock

Added to prevent drying; not specified in original recipe

  • 1 ยฝ tsp salt

    To taste; adjust as needed

  • ยฝ tsp black pepper

    To taste; adjust as needed

Method

  1. 1

Prepare the vegetables: peel and cut the carrots, potatoes, and onion into roughly equal-sized chunks. This ensures even cooking in the slow cooker.

    ~10 mins

Tip: Uniformly sized pieces cook more evenly

  2. 2

Optional but recommended: heat a little oil in a frying pan over medium-high heat and brown the pork tenderloin on all sides (about 2โ€“3 minutes per side). This develops deeper flavour, though it is not essential.

    ~8 mins
    Optional step

Tip: Browning is optional for this easy 'drop and go' recipe but enhances the final dish

  3. 3

Place the vegetables into the base of your slow cooker. Arrange the pork tenderloin on top of the vegetables.

    ~5 mins

Tip: Placing meat on top helps it cook evenly

  4. 4

Pour the water or stock around the pork and vegetables. Season with salt and pepper to taste.

    ~2 mins

Tip: Do not stir; keep ingredients in place

  5. 5

Cover and cook on Low for 8 hours or High for 5 hours, until the pork is very tender and the vegetables are soft.

    ~8 hrs

Tip: For Low setting, 8 hours is ideal. For High setting, check at 4.5 hours to avoid overcooking

  6. 6

Remove the pork tenderloin and allow it to rest for 5 minutes before slicing. Serve with the cooked vegetables and pan juices spooned over.

    ~5 mins

Tip: Resting allows the juices to redistribute, keeping the meat moist

Frequently Asked Questions

Pork tenderloin is ideal because it is lean and cooks quickly without becoming dry. You could use pork shoulder, though it will need longer cooking (10โ€“12 hours on Low) and is better suited to shredding. Pork loin is also suitable and will cook in about 6โ€“7 hours on Low
