Chicken breasts and fresh vegetables are layered into your slow cooker, then smothered with a delicious herb marinade made from olive oil, lemon juice, oregano, garlic, and onion powder. - 1000 g Chicken breast fillets
Vegetables
- 600 g Small red potatoes, quartered
- 250 g Dutch or baby carrots, trimmed and peeled
Marinade
- 60 ml Olive oil
- 80 ml Freshly squeezed lemon juice
Seasoning
- 1 tsp Dried oregano
- 1 tsp Onion powder
- 2 tsp Crushed garlic
Approximately 2 cloves minced
- 1 tsp Salt
- ½ tsp Freshly cracked black pepper

Add the quartered potatoes and trimmed carrots to your slow cooker.

Layer the chicken breast fillets over the vegetables in the slow cooker.

In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, dried oregano, onion powder, crushed garlic, salt, and freshly cracked black pepper to create the herb marinade.
