  • 30 g Fresh parsley
    , chopped(optional)

Method

  1. 1

Heat a frying pan over medium-high heat. Brown the meat pieces in batches for 3–4 minutes until golden on all sides. This step is essential for developing flavour. Transfer to your slow cooker.

    ~15 mins

Tip: Do not skip browning—it significantly improves the final dish

  2. 2

Add the diced onion and minced garlic to the slow cooker with the browned meat.

    ~2 mins
  3. 3

Pour in the stock. Stir to combine all ingredients.

    ~2 mins
  4. 4

Cover and cook on Low for 6 hours or High for 3 hours, until the meat is tender and cooked through.

    ~6 hrs

Tip: Low setting gives the best flavour development

  5. 5

About 30 minutes before the end of cooking, stir in the double cream and butter. Taste and adjust seasoning with salt and pepper.

    ~5 mins

Tip: Adding cream near the end preserves its rich flavour

  6. 6

Meanwhile, cook the pasta separately in a large pot of salted boiling water according to packet instructions. Drain well.

    ~10 mins

Tip: Keep pasta cooking time independent from slow cooker to prevent mushiness

  7. 7

Just before serving, stir the cooked pasta into the slow cooker sauce. Top with fresh parsley if desired, and serve immediately.

    ~3 mins

Tip: Do not let pasta sit in the slow cooker for extended time after stirring through

Frequently Asked Questions

Browning meat develops complex flavours through the Maillard reaction that slow cooking alone won't achieve. This extra step takes just 15 minutes but significantly improves the depth and richness of your finished dish, making it taste like it's been simmered for hours
