Method
- 1
Pat the lamb chops dry with kitchen paper and season generously on both sides with the all purpose seasoning (salt, pepper, garlic and onion powder).
~5 minsTip: Dry meat browns better and develops better flavour
- 2
Heat 15 ml (1 tbsp) of avocado oil in a large frying pan over medium-high heat. Working in batches to avoid overcrowding, brown the lamb chops for 2-3 minutes per side until golden. Set aside.
~8 minsTip: Browning is essential for colour and depth of flavour even in slow cooker recipes
- 3
Place the slow cooker insert (or transfer to your slow cooker) and add the remaining 30 ml (2 tbsp) avocado oil.
~2 mins - 4
Add the whole garlic cloves to the slow cooker. Layer the browned lamb chops on top of the garlic.
~3 mins - 5
In a small bowl, whisk together the Worcestershire sauce, garlic paste, Italian herb paste, garlic and herb seasoning, and fresh lemon juice.
~5 mins - 6
Pour the herb and sauce mixture evenly over the lamb chops in the slow cooker.
~2 mins - 7
Cover and cook on Low for 4 hours or on High for 2.5 hours. The lamb should be tender and cooked to your preferred doneness.
~4 hrsTip: Lamb chops are best served medium-rare to medium; avoid overcooking in slow cooker as they become tough
- 8
In the final 30 minutes of cooking, stir in the unsalted butter. Add the fresh thyme and rosemary sprigs.
~30 minsTip: Adding butter and herbs late preserves their delicate flavours
- 9
Carefully transfer the lamb chops to a serving platter. Spoon the garlic cloves and pan juices over the top.
~5 minsTip: The slow-cooked garlic will be mild and sweet, perfect to spread on crusty bread
- 10
Serve immediately whilst hot, with fresh crusty bread or alongside your favourite vegetables.

Frequently Asked Questions
Try to select chops of similar thickness so they cook evenly. If using a mix, place thicker chops at the bottom of the slow cooker where it's hotter, and thinner ones on top. Check for doneness after 3.5 hours on Low to avoid overcooking
