  • 6 pieces lamb chops

    8 chops if preferred

Aromatics & Oil

  • 6 cloves garlic cloves, whole
    , whole
  • 45 ml avocado oil, divided, for browning and slow cooker

    Use 15 ml (1 tbsp) for browning chops; 30 ml (2 tbsp) for slow cooker

  • 30 ml lemon juice, fresh, from 1 fresh lemon
  • 115 g unsalted butter

    Add in final 30 minutes of cooking

Seasonings

  • 10 ml Worcestershire sauce
  • 5 ml garlic paste
  • 5 ml Italian herb paste
  • 5 ml garlic and herb seasoning
  • 5 ml all purpose seasoning, salt, pepper, garlic and onion powder

Herbs

  • 1 sprig fresh thyme
    , whole sprig

Method

    Pat the lamb chops dry with kitchen paper and season generously on both sides with the all purpose seasoning (salt, pepper, garlic and onion powder).

    Heat 15 ml (1 tbsp) of avocado oil in a large frying pan over medium-high heat. Working in batches to avoid overcrowding, brown the lamb chops for 2-3 minutes per side until golden. Set aside.

    Place the slow cooker insert (or transfer to your slow cooker) and add the remaining 30 ml (2 tbsp) avocado oil.

    Add the whole garlic cloves to the slow cooker. Layer the browned lamb chops on top of the garlic.

    In a small bowl, whisk together the Worcestershire sauce, garlic paste, Italian herb paste, garlic and herb seasoning, and fresh lemon juice.

    Cover and cook on Low for 4 hours or on High for 2.5 hours. The lamb should be tender and cooked to your preferred doneness.
