Ingredients
For the Grits
- 480 ml whole milk
- 720 ml chicken or vegetable stock
- 200 g polenta (cornmeal grits)
- 50 g butter
- 100 g mature cheddar cheese, grated
Add in final 5 minutes of cooking
For the Shrimp
- 6 rashers bacon rashers, diced
Fry separately until crispy, then set aside
- 450 g large raw shrimp, peeled and deveined
Add in final 15β20 minutes to prevent overcooking
- 2 tsp Cajun seasoning
Add with shrimp in final cooking stage
- 120 ml double cream
Stir in at the very end
Seasoning
- Β½ tsp salt
To taste
- ΒΌ tsp black pepper

Fry the diced bacon in a frying pan over medium heat until crispy, about 5β7 minutes. Remove with a slotted spoon and set aside on kitchen paper.

Pour the stock and milk into your slow cooker. Gradually whisk in the polenta (grits) to avoid lumps, stirring until smooth.

Cook on Low for 3 hours 40 minutes or High for 1 hour 40 minutes, stirring occasionally. The grits should be very creamy and tender.

About 20 minutes before serving, gently stir the shrimp into the slow cooker and sprinkle with the Cajun seasoning. Season with salt and pepper to taste.
