Ingredients
Main
- 800 g Boneless, skinless chicken breasts, cut into bite-sized pieces
Can also use chicken thighs for more flavour
Broth
- 1000 ml Chicken stock
Use homemade or shop-bought
- 200 g Carrots, peeled and sliced
- 150 g Celery, sliced
- 1 medium Onion, diced
Seasoning
- to taste Salt and black pepper
Dumplings
- 200 g Plain flour
For dumpling dough
- 5 ml Baking powder
- 30 g Butter, melted
- 120 ml Milk
Garnish
- 15 g Fresh parsley, chopped(optional)
Add as garnish just before serving

Heat a little oil in a large frying pan and briefly brown the chicken pieces on all sides for colour and flavour. This step is optional but recommended.

Place the browned chicken (or raw, if skipping step 1), carrots, celery, and diced onion into your slow cooker.

Pour the chicken stock over the ingredients and season with salt and black pepper to taste.

Cover and cook on Low for 6 hours or High for 3.5 hours, until the chicken is completely cooked through and tender.

While the chicken cooks, prepare the dumpling dough. In a bowl, combine the flour, baking powder, and a pinch of salt. Stir in the melted butter and milk until a soft dough forms.

Drop spoonfuls of the dumpling dough onto the surface of the simmering broth in the slow cooker. Do not stir.
