Crockpot Pot Roast Recipe
This Crockpot pot roast is a comforting, no-fuss meal that delivers beautifully tender beef with root vegetables. Simply season your beef joint, add your veg and liquid, and let the slow cooker do all the hard work. Cooked on high for 4 to 6 hours, the meat becomes wonderfully tender and full of flavour. It's a perfect weekend dinner or midweek meal when you want something wholesome without spending hours in the kitchen. This recipe is based on Madison Shari's popular pot roast method, adapted with classic pot roast ingredients.

Ingredients
Main
- 1400 g beef chuck roast
A boneless beef chuck joint works best for slow cooking
Vegetables
- 700 g baby potatoes, halved if large
- 400 g carrots, peeled and cut into chunks
- 1 large onion, quartered
Seasoning & Liquid
- 250 ml beef stock
Reduced quantity as slow cookers retain moisture
- 1 packet onion soup mix
Approximately 40g; a common addition in American-style pot roast
- 4 cloves garlic cloves, minced
- 1 tsp salt
Adjust to taste
- ½ tsp black pepper, freshly ground
- 2 tbsp Worcestershire sauce(optional)
Garnish
- 2 tbsp fresh parsley, chopped(optional)
Sprinkle over the finished dish before serving

Season the beef chuck roast generously with salt, pepper, and minced garlic, rubbing the seasoning into all sides of the meat.

Optional but recommended: heat a splash of oil in a large frying pan over high heat and sear the beef on all sides until well browned. This adds wonderful depth of flavour.

Place the halved potatoes, carrot chunks, and quartered onion into the base of the slow cooker.

Place the beef roast on top of the vegetables. Sprinkle the onion soup mix over the top of the meat.

Pour the beef stock and Worcestershire sauce (if using) around the sides of the roast, being careful not to wash off the soup mix.

Place the lid on the slow cooker and cook on High for 4 to 6 hours, or on Low for 8 hours, until the beef is fork-tender and falls apart easily.

Carefully remove the roast from the slow cooker and shred or slice the meat. Serve alongside the vegetables and spoon over the cooking juices. Garnish with fresh parsley if desired.
