Ingredients

Units:

Main

  • 1400 g beef chuck roast

A boneless beef chuck joint works best for slow cooking

Vegetables

  • 700 g baby potatoes, halved if large
  • 400 g carrots, peeled and cut into chunks
  • 1 large onion, quartered

Seasoning & Liquid

  • 250 ml beef stock

Reduced quantity as slow cookers retain moisture

  • 1 packet onion soup mix

Approximately 40g; a common addition in American-style pot roast

  • 4 cloves garlic cloves
    , minced
  • 1 tsp salt

    Adjust to taste

  • ½ tsp black pepper, freshly ground
  • 2 tbsp Worcestershire sauce(optional)

Garnish

  • 2 tbsp fresh parsley
    , chopped(optional)

Sprinkle over the finished dish before serving

Method

  1. 1

Season the beef chuck roast generously with salt, pepper, and minced garlic, rubbing the seasoning into all sides of the meat.

    ~5 mins
  2. 2

Optional but recommended: heat a splash of oil in a large frying pan over high heat and sear the beef on all sides until well browned. This adds wonderful depth of flavour.

    ~5 mins
    Optional step

Tip: Browning is not essential but greatly improves the final flavour and colour of the roast.

  3. 3

Place the halved potatoes, carrot chunks, and quartered onion into the base of the slow cooker.

    ~3 mins
  4. 4

Place the beef roast on top of the vegetables. Sprinkle the onion soup mix over the top of the meat.

    ~2 mins
  5. 5

Pour the beef stock and Worcestershire sauce (if using) around the sides of the roast, being careful not to wash off the soup mix.

    ~2 mins
  6. 6

Place the lid on the slow cooker and cook on High for 4 to 6 hours, or on Low for 8 hours, until the beef is fork-tender and falls apart easily.

    ~6 hrs

Tip: Cooking time may vary depending on the size of your joint and your slow cooker model.

  7. 7

Carefully remove the roast from the slow cooker and shred or slice the meat. Serve alongside the vegetables and spoon over the cooking juices. Garnish with fresh parsley if desired.

    ~5 mins

Tip: For a thicker gravy, strain the cooking liquid into a saucepan, bring to a simmer, and whisk in 1 tablespoon of cornflour mixed with a little cold water.
