This Crockpot honey garlic chicken is the ultimate set-it-and-forget-it weeknight dinner. Chicken thighs are slow-cooked with potatoes, carrots, and onions in a moreish honey, garlic, and soy sauce glaze that develops incredible depth of flavour. The result is fall-apart-tender chicken with caramelised vegetables, all finished in a sticky, glossy sauce. Perfect for busy evenings when you want a home-cooked meal without the fuss

Ingredients
Sauce
- 120 ml honey
- 60 ml ketchup
- 60 ml soy sauce
- 3 cloves garlic cloves, finely chopped, finely chopped
- 5 ml dried oregano
- 5 ml fresh parsley, finely chopped, finely chopped(optional)
Add in the final 15 minutes of cooking to preserve flavour
Use fresh parsley rather than dried for best flavour
Main
- 6 thighs chicken thighs, bone-in and skin-on, patted dry
6 to 8 thighs; use 6 for 4 servings, 8 for 6 servings
Vegetables
- 450 g red potatoes, quartered or halved
Leave skin on for texture
- 225 g carrots, sliced into 2.5cm chunks
- 225 g sweet onions, quartered

In a small bowl, mix together the honey, ketchup, soy sauce, chopped garlic, oregano, and parsley. Stir until well combined.

Pat the chicken thighs dry with kitchen paper and arrange them in the base of your slow cooker.
~5 minsTip: Browning the chicken in a hot frying pan for 2-3 minutes per side first will improve colour and flavour, though this is optional

Add the red potatoes, carrots, and onions around and amongst the chicken thighs.

Pour the honey garlic mixture evenly over the chicken and vegetables. Stir gently to coat everything.

Cover and cook on High for 5 hours, or on Low for 7 hours, until the chicken is tender and cooked through (internal temperature 75°C) and the vegetables are soft.
