This crockpot beef pot roast is an ideal comfort food for cooler months. The slow cooker method ensures the beef becomes incredibly tender whilst developing deep, rich flavours. Combined with seasonal vegetables, this is a complete one-pot meal that's perfect for family dinners or weekend entertaining. Ingredients
Main
- 1 Β½ kg Beef chuck or brisket, cut into chunks, cut into large chunks
Chuck roast or brisket is ideal for slow cooking
- 500 g Potatoes, peeled and chunked
Root potatoes work best
- 400 g Carrots, peeled and chunked
- 1 medium Onion, peeled and quartered
- 500 ml Beef stock or broth
Use quality beef stock for best flavour
Seasonings
- 1 ΒΌ tsp Salt
Adjust to taste
- Β½ tsp Black pepper, freshly ground
- 1 tsp Dried thyme or mixed herbs
Or 0.5 tsp if using dried herbs
Optional
- 15 ml Worcestershire sauce(optional)

Pat the beef dry with kitchen paper and season generously with salt, pepper, and dried herbs.

Optional: Heat a large frying pan over medium-high heat and brown the beef in batches for 2-3 minutes per side to develop colour and flavour. This step enhances the final dish but can be skipped if short on time.

Add the browned beef (or raw if skipping browning) to your slow cooker along with the onion, potatoes, and carrots.
