A simple homemade rice pudding made entirely in the slow cooker. Pudding rice, milk, sugar, butter, vanilla and nutmeg go in together, with the pot greased first so nothing sticks. It cooks on Low for 4 to 5 hours and is stirred whenever you pass by. The lid comes off for the last 10 to 15 minutes to let it thicken, and in the video it came out thick and creamy with no cream added. Cream and sultanas are optional extras, and a spoonful of jam in the middle is a family favourite.
Ingredients
- 1.4 litresmilk
- 200 gpudding rice
- 100 gsugar
- 25 gunsalted butter
- 1 tspvanilla extract
- 1 tspground nutmeg
- cream
- sultanas
- jam
Method
Grease the bottom and sides of the slow cooker pot with butter so the pudding does not stick.
Pour in the milk, then add the pudding rice, sugar, vanilla extract, nutmeg and the 25 g of butter. No other thickener is needed.
Cover and cook on Low for 4 to 5 hours, stirring every now and again whenever you walk past. The video version took 4.5 hours.
~270 minFor the last 10 to 15 minutes, take the lid off so the pudding can thicken up.
~15 minIf the rice is cooked but the pudding is still too runny, leave the lid off for about half an hour and it will thicken further.
~30 minScrape around the edges of the pot, spoon into bowls and serve. Add a dollop of jam in the middle if you like.
