Units:

Main

  • 800 g Lamb loin chops, trimmed of excess fat

    4 chops, approximately 200g each

Flavourings

  • 4 sprigs Fresh rosemary sprigs
    , whole sprigs

Add in final 30 minutes of cooking to preserve flavour

    About 15g total

  • 4 cloves Garlic cloves
    , peeled and crushed

Add in final 30 minutes of cooking

Seasoning

  • 3 g Salt

    To taste

  • 2 g Black pepper

    To taste, freshly ground

Liquid

  • 120 ml Beef or lamb stock

Use less liquid than traditional recipes as slow cooker retains moisture

Cooking

  • 15 ml Olive oil

For browning meat in frying pan

Method

  1. 1

Pat the lamb loin chops dry with kitchen paper and season both sides generously with salt and black pepper.

    ~5 mins
  2. 2

Heat the olive oil in a large frying pan over a medium-high heat until shimmering. Working in batches if necessary, sear the lamb chops for 2–3 minutes on each side until golden brown. Do not skip this step as it develops flavour crucial to the dish.

    ~8 mins

Tip: Browning is essential for depth of flavour, even though chops will finish cooking in the slow cooker

  3. 3

Transfer the browned lamb chops to your slow cooker. Pour the stock around (not over) the chops.

    ~3 mins
  4. 4

Cover and cook on Low for 4 hours, or on High for 2.5 hours, until the lamb is very tender.

    ~4 hrs

Tip: Check after 3.5 hours on Low to ensure meat is not becoming too dry. Loin chops are lean cuts.

  5. 5

In the final 30 minutes of cooking, add the crushed garlic cloves and fresh rosemary sprigs to the slow cooker. This preserves their fresh flavour.

    ~30 mins

Tip: Adding fresh herbs at the end prevents them becoming bitter or losing their aromatic qualities

  6. 6

Taste and adjust seasoning with additional salt and pepper if needed. Serve the lamb chops hot, garnished with a fresh rosemary sprig if desired, alongside quick-cooking vegetables or a simple salad.

    ~5 mins
