Ingredients
Main
- 800 g Lamb loin chops, trimmed of excess fat
4 chops, approximately 200g each
Flavourings
- 4 sprigs Fresh rosemary sprigs, whole sprigs
Add in final 30 minutes of cooking to preserve flavour

- 4 cloves Garlic cloves, peeled and crushed
Add in final 30 minutes of cooking
Seasoning
- 3 g Salt
To taste
- 2 g Black pepper
To taste, freshly ground
Liquid
- 120 ml Beef or lamb stock
Use less liquid than traditional recipes as slow cooker retains moisture
Cooking
- 15 ml Olive oil
For browning meat in frying pan

Pat the lamb loin chops dry with kitchen paper and season both sides generously with salt and black pepper.

Heat the olive oil in a large frying pan over a medium-high heat until shimmering. Working in batches if necessary, sear the lamb chops for 2–3 minutes on each side until golden brown. Do not skip this step as it develops flavour crucial to the dish.

Transfer the browned lamb chops to your slow cooker. Pour the stock around (not over) the chops.

Cover and cook on Low for 4 hours, or on High for 2.5 hours, until the lamb is very tender.
