Ingredients
Main
- 600 g potatoes, cubed or halved
Medium waxy potatoes work best
- 500 g smoked sausage, sliced into 1cm rounds
Polish kielbasa or andouille sausage
- 4 cobs fresh corn on the cob, cut into thirds
Add in final 20 minutes
Or 400g frozen sweetcorn kernels
- 500 g large raw shrimp, peeled and deveined
Add in final 20 minutes
Frozen is fine, thaw first
Seasonings & Liquids
- 350 ml chicken or vegetable stock
Reduced quantity for slow cooker
- 1 tbsp Old Bay seasoning
Or seafood seasoning mix
- 4 cloves garlic cloves, minced
- 1 to taste salt and black pepper
Add before serving
Optional Garnish
- 30 g fresh parsley, chopped(optional)
Garnish before serving
- 2 lemons lemon wedges, cut into wedges(optional)
Serve on the side
Method

Add the cubed potatoes, sliced sausage, minced garlic, and Old Bay seasoning to your slow cooker.
~5 minsTip: Optionally, brown the sausage in a frying pan first for deeper flavour, then add to the slow cooker.

Pour in the chicken or vegetable stock. Stir well to combine and distribute the seasonings evenly.

Cover and cook on Low for 6 hours or High for 3 hours, until the potatoes are tender.
~6 hrsTip: The sausage and potatoes form the base of the dish during this time.

Add the corn and shrimp to the slow cooker. Stir gently to combine.
~2 minsTip: If using fresh corn, cut into thirds. Frozen corn kernels can be added directly.

Cover and cook for a further 20 minutes on High until the shrimp are pink and cooked through.
~20 minsTip: Do not overcook the shrimp as they will become tough and rubbery.

Taste and season with salt and black pepper as needed. Stir gently.
