An easy to cook dish for an extraordinary dinner with your family and friends.

Ingredients

  • 17 oz (500g) lean lamb neck fillet cut into cubes
  • 1 vegetable stock cube
  • 2 sticks of cinnamon broken in half
  • 1 tablespoon olive oil
  • 8 oz (225g) basmati rice
  • 12 chopped dried apricots (ready to eat)
  • 1 onion cut in half and sliced
  • handful amount of almonds or pine nuts
  • handful amount of fresh mint leaves chopped

Steps:

  • In a large pan, dry-fry the almonds or nuts until lightly toasted.
  • Put into a plate and set aside.
  • In the same pan, heat oil and fry the cinnamon and onion for about 5 - 10 minutes.
  • Bring the heat up then add the lamb and fry until browned.
  • Place into the slow cooker.
  • Stir in the rice then add the stock cube, apricots and water.
  • Cover and cook for 3 to 4 hours over low heat.
  • Toss in the mint and nuts to serve.
