Cooking time: 4 hours and 50 minutes on  Low setting

Ingredients:

  • 450 g (15 oz) fresh shrimp, medium sized
  • 900 g (32 oz) chicken broth
  • 400 g (14 oz) coconut milk
  • 2 red bell peppers, sliced
  • 10 slices of fresh ginger, peeled
  • 1 tablespoon chili garlic sauce
  • 5 garlic cloves
  • 2 cups of fresh sugar snap peas
  • 1 cups of Rice, uncooked
  • cup of sliced green onion tops
  • 1/3 cup of fresh lime juice

Steps:

  1. Place the red bell peppers, uncooked rice, ginger and garlic cloves in the slow cooker.
  2. Pour in the chicken broth, chili garlic sauce and coconut milk.
  3. Stir well, cover and cook for 4 hours over low heat.
  4. Add the green onion tops and sugar snap peas.
  5. Stir in the shrimp and lime juice.
  6. Cover and cook for another 50 minutes.
  7. Transfer into serving bowls and serve.
