Thai Beef Curry

A delicious curry for slow cooker, a good way to remove all the stress of a hectic day.

Cooking time: 8 hours on low setting


  • 400 g (14 oz) can of coconut milk
  • 2 kg (4.4 lbs) short ribs or brisket, cut into large chunks
  • coriander
  • 50 ml (1.6 fl oz) rice wine vinegar
  • 2-3 Tablespoons groundnut oil
  • 3 garlic cloves, chopped
  • 2 stalks of lemongrass, chopped 1 stalk and bashed the other 1
  • 2 tablespoons light brown or palm sugar
  • 1-2 green chillies deseeded and chopped roughly
  • 50 ml (1.6 fl oz) fish sauce
  • 2 cm (1 inch) ginger, peeled and chopped
  • 6 kaffir lime leaves
  • juice of 2 limes
  • 2 star anise
  • wedges of lime to serve


  1. Brown the beef in batches in a large pan with oil.
  2. Transfer the beef to a plate, reserving the juice.
  3. Place half the coriander, garlic, chopped lemongrass, chillies and ginger in a mini processor.
  4. Add the rest of oil and process until rough paste.
  5. Place the paste in the slow cooker and heat for few minutes on high.
  6. Add the beef and the remaining ingredients except from the lime juice and the remaining coriander.
  7. Cook for 8 hours on low heat until meat is soft.
  8. Remove the bones and shred the meat using forks.
  9. Strain the sauce if its too thin, boil to reduce.
  10. Add the lime juice and the remaining coriander.
  11. Season with sugar and fish sauce to taste.
