Cooking time: 4-5 hours on High setting

Ingredients:

  • 280g (10 oz) Processed cheese spread
  • 6 eggs, large
  • 4 cups cooked potatoes, diced
  • 2 tablespoons taco seasoning mix, stir before measuring
  • 450g (1 lb) lean beef mince (ground beef)

Steps:

  1. In a large greased frying pan, scramble-fry the beef for 5 minutes over medium-high heat.
  2. Transfer to a large bowl. Add taco seasoning, potato and a small amount of pepper. Stir well.
  3. Transfer to well-greased 3.5 to 4L slow cooker.
  4. In a medium size bowl, beat the eggs and mix with cheese spread until smooth.
  5. Pour in the beef mixture and stir thoroughly.
  6. Cover and cook for 2 hours over high heat.

Note: To make this dish spicy, replace the taco seasoning with chopped jalapeno chilies and add a little amount of salt to the potato mixture.
