Ingredients:
- 280g (10 oz) Processed cheese spread
- 6 eggs, large
- 4 cups cooked potatoes, diced
- 2 tablespoons taco seasoning mix, stir before measuring
- 450g (1 lb) lean beef mince (ground beef)
Steps:
- In a large greased frying pan, scramble-fry the beef for 5
minutes over medium-high heat.
- Transfer to a large bowl. Add taco seasoning, potato and a small
amount of pepper. Stir well.
- Transfer to well-greased 3.5 to 4L slow cooker.
- In a medium size bowl, beat the eggs and mix with cheese spread
until smooth.
- Pour in the beef mixture and stir thoroughly.
- Cover and cook for 2 hours over high heat.
Note: To make this dish spicy, replace the taco seasoning with
chopped jalapeno chilies and add a little amount of salt to the potato
mixture.
