If youíve been thinking about saving money by going meatless one night a week, then this is the perfect recipe. Itís so rich and delicious you wonít miss the meat at all. Served with a full-bodied red wine, garlic bread, and a green salad, it will be a most enjoyable meal.

Ingredients

  • 12 oz (340g) packet jumbo pasta shells cooked and drained
  • 32 oz (900g) jar spaghetti sauce
  • 2 cups cottage cheese
  • 2 cups shredded mozzarella cheese
  • Ĺ cup grated Parmesan cheese
  • Ĺ cup finely chopped onions
  • 2 tablespoons Italian seasoning (or 1 tablespoon oregano, and 1 tablespoon basil)
  • 10 oz (280g) packet frozen spinach thawed, with water squeezed out

Steps:

  • Cook shells according to package directions and drain.
  • Pour half the jar of spaghetti sauce into slow cooker.
  • In a medium bowl, mix together spinach and other ingredients.
  • Stuff each shell with the spinach mixture and layer shells in slow cooker.
  • Pour the rest of the spaghetti sauce over the shells.
  • Cover and cook on Low setting for 4 hours.
  • Garnish with parmesan cheese if desired.
