Cooking time: 6-8 hours on Low settings


  • 3 sweet potatoes, cubed
  • 3 red potatoes, cubed
  • 2 sweet onions, chopped
  • 6 carrots (large), chopped
  • 350 ml (12 oz) Irish stout beer
  • 2 kg (4 lb) corned beef brisket
  • 1 head cabbage, cored and finely chopped
  • 1 cups of brown sugar


  1. Pour 175 ml (6 oz) Irish stout beer into a slow cooker.
  2. Rinse the corned beef brisket well and allow to dry.
  3. Season with brown sugar and place into the slow cooker.
  4. Place the cabbage, sweet potatoes, red potatoes, carrots and onion around the brisket inside the slow cooker.
  5. Pour the remaining Irish stout beer to the slow cooker with brisket and vegetables.
  6. Cover and cook for 6 to 8 hours over low heat until brisket is tender.
  7. Remove the brisket and vegetables from heat, allow to stand before slicing.
  8. Serve.
