  • 3 sweet potatoes cubed
  • 3 red potatoes cubed
  • 2 onions chopped
  • 6 carrots (large), chopped
  • 12 oz (340g) Irish stout beer
  • 4 lb (2kg) corned beef brisket
  • 1 head cabbage cored and finely chopped
  • 1 cups brown sugar


  • Pour 175 ml (6 oz) Irish stout beer into a slow cooker.
  • Rinse the corned beef brisket well and allow to dry.
  • Season with brown sugar and place into the slow cooker.
  • Place the cabbage, sweet potatoes, red potatoes, carrots and onion around the brisket inside the slow cooker.
  • Pour the remaining Irish stout beer to the slow cooker with brisket and vegetables.
  • Cover and cook for 6 to 8 hours over low heat until brisket is tender.
  • Remove the brisket and vegetables from heat, allow to stand before slicing.
  • Serve.
