Sticky Spiced Lamb Shanks

A delicious lamb dish perfect for a dinner for two.

Ingredients

  • 500 ml (16 fl oz) chicken stock or vegetable stock
  • 2 lamb shanks
  • 4 garlic cloves sliced
  • 14 oz (400g) can of chopped tomatoes
  • 3 onions sliced
  • 1 tablespoons of olive oil
  • 1 tablespoon cumin and coriander seeds crushed
  • 4 dried figs chopped
  • 4 chopped dried apricots chopped
  • cinnamon stick
  • 2 tablespoons pomegranate molasses
  • pinch of chilli flakes
  • handful amount of chopped coriander leaves

Steps:

  • Heat oil in a frying pan and cook the shanks until brown.
  • Transfer the shank into the slow cooker.
  • Add the all the ingredients except for the coriander.
  • Cover and cook for 9-10 hours on Low heat.
  • Take the lamb off the slow cooker.
  • Wrap the lamb with foil then keep warm.
  • Bring the lamb back to heat and cook the juices until thick.
  • Season to taste.
  • Spread the coriander to the sides then serve.
