Ingredients:
- 2 x 270 g (10 oz) cans of coconut milk, light
- 750 g (26 oz) chicken breast
- 2 tablespoons curry powder
- 2 teaspoons cumin
- 2 carrots, peeled and sliced
- 1 onion, sliced
- 1 teaspoon turmeric
- 1 garlic clove, chopped
- 1 teaspoon pepper
- 1 potato, diced
- 1 chilli, sliced
- 1 tablespoon chopped ginger
- 1 can of water
- 1 stalk of lemongrass, sliced
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 2 kaffir lime leaves, sliced (optional)
- cooking oil spray
Steps:
- Cut the chicken into 2 cm (1 inch) chunks.
- In a non-stick pan, brown onion using the oil spray.
- Place all the dried ingredients in the slow cooker. Mix well
until combined.
- Cover and cook for 9 hours over low heat.
- Sprinkle with fresh coriander and serve.
- Add rice and chutney if desired.
