Cooking time: 6-8 hours on  Low setting


  • 400 g (14 oz) can diced tomatoes, with juice
  • 1 tablespoon olive oil
  • 1 teaspoon fresh ginger, chopped
  • kg (1 lb) beef stew meat
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 fresh jalapeno peppers, diced
  • 1 cup beef broth
  • 1 onion, sliced and quartered
  • salt
  • pepper


  1. In a skillet, heat the olive oil and cook the beef until browned.
  2. Take the beef off the skillet, reserving the juice.
  3. Season the beef with salt and pepper.
  4. In the same skillet, cook the ginger, jalapeno and garlic for about 2 minutes. Add the curry powder, diced tomatoes and the reserved juice. Mix well until combined.
  5. Layer the onion in the bottom of a slow cooker, add the browned beef. Add the garlic mixture into the slow cooker.
  6. Cover and cook for 6 to 8 hours over low heat.
