Hi guys :) This site is a treasure. When I first ckclied over here I watched like 100 minutes of video !! It was that good. The thing that you (the cheffy chef) did differently was you have patience. When I followed the instructions to dim the heat and put the cover on and let it cook for a while to absorb all the whatever flavours in the steam.It worked, simple rice now tastes so much better AND they don't stick. Just like in the video. I am going to download all the videos and save them on my computer. You can have whatever you want from my site >

Slow Cooker Steamed Fruitcake

Slow Cooker Steamed Fruitcake

This delicious recipe will surely delight everyone if served on Christmas eve.

Ingredients

  • 4 oz (110g) melted butter
  • 2 tablespoons candied lemon peel
  • 18 oz (500g) deluxe yellow cake mix
  • 3 eggs
  • 2 tablespoons candied citron optional
  • 2 tablespoons candied orange peel
  • teaspoon ground cardamom
  • teaspoon ground all-spice
  • 1 cups milk
  • 1 teaspoon ground cinnamon
  • teaspoon ground mace
  • cup chopped dates
  • teaspoon ground ginger
  • cup dried cranberries
  • 1 tablespoon sugar
  • teaspoon grated nutmeg
  • cup chopped pecans

Ingredients for Orange Glaze:

  • 2 tablespoons cornstarch
  • 1 cup orange marmalade
  • 2 tablespoons lemon juice

To Make the Glaze:

  • Mix orange marmalade, lemon juice and cornstarch in a small saucepan.
  • Cook for about 5 minutes over medium heat, stir well until thickened.
  • Transfer into a bowl. Set aside.
  • Steps:

  • Place a low rack in the bottom of a slow cooker (you may use crumpled foil).
  • Add 4 cups of water and adjust the heat to LOW.
  • Combine the eggs, cake mix, milk, melted butter, cinnamon, ginger, cardamom, allspice, nutmeg and mace in a mixer bowl with electric mixer.
  • Beat the mixture on low speed until well combined.
  • Turn the speed to high and beat the mixture again for 2 minutes.
  • Add the dates, dried cranberries, orange peels, candied lemon, pecans and citron.
  • Coat a large dish with butter and confectioners'
  • Place the cake batter into the large dish.
  • Cover with wax paper and wrap the whole dish with foil.
  • Put the covered dish on the rack in the slow cooker.
  • Cover and coGo n LOW heat.
  • Turn the heat off, but leave the dish inside the slow cooker for about 2 hours.
  • Slice or cut into wedges then garnish with glaze.
  • Serve.
