Cooking time: 4-5 hours on High settings or 6-7 hours on Low settings

Ingredients:

  • 440 g (14.5 oz) chicken broth in can
  • 0.35 kg ( lb) pork tenderloin, cubed
  • 2 cups onion, chopped
  • 110 g (4 oz) diced green chilies in can
  • 425 g (15 oz) yellow hominy in can, drained
  • 2 tablespoons ground cumin
  • 1 dried chili negro soaked for 30 minutes in boiled water, rinsed and drained
  • 440 g 914.5 oz) beef broth in can
  • 0.35 kg ( lb) boneless and skinless chicken breast halves - cut into 5 cm (2 inch) pieces
  • 1 teaspoons garlic, crushed
  • 425 g (15 oz) white hominy, drained
  • 2 teaspoons dried Mexican oregano

Steps:

  1. Remove and discard from the chili pepper and mix with half of chicken broth.
  2. Place the mixture in a blender or a food processor and puree until smooth.
  3. Place the puree into the slow cooker.
  4. Pour the remaining chicken broth then add the pork, beef broth, garlic, onion, green chilies white and yellow hominy.
  5. Season with oregano, cumin and bay leaf.
  6. Cover and cook for 4 to 5 hours on high or 6 to 7 hours on low.
  7. Remove and discard the bay leaf before serving.
