Ingredients

  • 14 oz (400g) chicken broth in can
  • lb (340 g) pork tenderloin cubed
  • 2 cups chopped onions
  • 4 oz (110g) diced green chillies in can
  • 15 oz (400g) yellow hominy in can, drained
  • 2 tablespoons ground cumin
  • 1 dried chili negro soaked for 30 minutes in boiled water, rinsed and drained
  • 15 oz (400g) beef broth in can
  • lb (340 g) boneless, skinless chicken breasts halves - cut into 5 cm (2 inch) pieces
  • 1 teaspoon garlic cloves crushed
  • 15 oz (400g) white hominy drained
  • 2 teaspoons dried Mexican oregano

Steps:

  • Remove and discard from the chili pepper and mix with half of chicken broth.
  • Place the mixture in a blender or a food processor and puree until smooth.
  • Place the puree into the slow cooker.
  • Pour the remaining chicken broth then add the pork, beef broth, garlic, onion, green chilies white and yellow hominy.
  • Season with oregano, cumin and bay leaf.
  • Cover and cook for 4 to 5 hours on high or 6 to 7 hours on low.
  • Remove and discard the bay leaf before serving.
