Slow Cooker Size
Meatballs are great on their own as a main dish, or you can make
wonderful sandwiches on them on sandwich rolls. This recipe makes quite
a bit, so be prepared to feed a crowd or keep some for leftovers. Serve
with vegetables or salad, bread, and beer.
3 lb (1.5kg)lean ground beef
1 cupchopped onions
½ cupfine dry seasoned bread crumbs
350 ml (11 fl oz)beer
175 ml (6 fl oz)
spicy vegetable cocktail juice
1 teaspoonlemon juice
1 teaspoonhot sauce
salt and pepper
16 oz (450 g)ketchup
1 teaspoonWorcestershire sauce
Combine beef, ½ cup onions, bread crumbs, and eggs and form into
small meatballs. Brown in a skillet on all sides (or bake in oven
until browned). Drain meatballs and discard drippings.
Combine remaining ingredients in a saucepan. Bring just to a
boil, then lower heat and simmer 15 minutes over low heat.
Put meatballs and sauce into slow cooker. Cover and cook on Low
setting for 4 to 6 hours, stirring occasionally.
