Slow Cooker Size 3.5L+
Serves: 4
Cooking time: 8-10 hours on Low setting

Ingredients:

  • kg (1 lbs) salmon fillet
  • 1 x 450 g (16 oz) bag of baby carrots
  • 2 tablespoons olive oil
  • 4 onions, chopped
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • teaspoon dried dill weed
  • teaspoon salt
  • 1/8 teaspoon pepper

Steps:

  1. Place the butter and olive oil in the slow cooker.
  2. Add the baby carrots, garlic and onions.
  3. Stir, cover and cook for 6 to 7 hours on low heat until vegetables are caramelised.
  4. Place the fillet in the slow cooker, add the dill weed, pepper and salt.
  5. Cover and cook for another 1 to 2 hours on low until fillets are well done.
  6. Transfer into the serving plate and garnish with sliced onions.
  7. Serve.
