Boiled potatoes will turn out to be a great snack that the whole
family would surely love. Simply cook them slowly with saffron, garlic
and spices then serve with matching pork barbeque or fish steaks.
2.5 lb (1 kg)potatoes
scrubbed and cut into small pieces (choose fresh
2 tablespoonsolive oil
1 teaspooncumin seeds
1 teaspooncoriander seeds
450 ml (14 fl oz)chicken stock
Preheat your cooker. While heating oil in a frying pan, mix in onion
and fry stirring and let cook for 5 minutes.
Add coriander seeds and crushed cumin with the onion saffron,
turmeric and garlic. Let cook for 1 minute. Pour the stock and add
sultanas, salt, and sprinkle a little bit of pepper. Bring to a boil
Pour the mixture into the pot and add the potato chunks. The
chunks should be covered entirely. Place a lid on top and cook on
low heat for 4 to 5 hours.
