  • 2 x 1 kg (2.5 lbs) pork boneless sirloin roast
  • 1 tablespoon vegetable oil
  • 2 to 3 tablespoons Dijon mustard
  • 2 tablespoons all purpose flour
  • 2 carrots (medium), chopped finely
  • 1 shallot (small) chopped finely
  • 1 onion (medium), chopped finely
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup dry white wine
  • 1/4 cup half-and-half


  1. Heat oil in a skillet over medium heat.
  2. Place the pork roast in the skillet and cook for 10 minutes until brown on all sides.
  3. Transfer the pork to a slow cooker.
  4. In a bowl, mix all the ingredients except for the mustard and half-and-half.
  5. Pour the mixture over pork.
  6. Cover and cook for 7 to 9 hours on low.
  7. Take the pork off the slow cooker.
  8. Keep warm.
  9. Stir the mustard and half-and-half into juices.
  10. Bring the heat to high.
  11. Cover and cook for about 15 minutes until thickened.
  12. Serve pork with sauce on top.
