Turn your simple meal into a sumptuous experience with this delicious dish.

Ingredients

  • 3 lb (1.5kg) boneless pork loin roast trimmed of fat
  • 16 oz (450 g) pack of baby carrots
  • 1 lb (500g) small red potatoes cut in half
  • 1 teaspoon dried thyme
  • 1 teaspoon dried tarragon or 1 tablespoon fresh chopped tarragon
  • 1 onion chopped
  • 2 garlic cloves minced
  • teaspoon salt
  • cup dijon mustard
  • teaspoon pepper
  • 1 cups beef broth

Steps:

  • Arrange the potatoes and baby carrots at the bottom of the slow cooker.
  • Add the garlic and onion.
  • Combine tarragon, thyme, mustard, salt and pepper in a small bowl.
  • Spread the mixture over pork roast.
  • Place the pork roast into the slow cooker.
  • Pour in the beef broth.
  • Cover and cook for 8-9 hours on low.
  • Transfer the pork roast and vegetables to serving platter.
  • Cover and allow to stand to 15 minutes.
  • To thicken the sauce mix 1-1 tablespoons cornstarch with 3 tablespoons water.
  • Add the juices to the slow cooker and cook for another 10-15 minutes on high until thickened.
  • Serve.
