Cooking time: 8-10 hours on Low setting


  • 4 salmon fillets about 170 g (6 oz) each
  • 1 lemon
  • teaspoon salt
  • cup pesto sauce
  • teaspoon freshly ground pepper


  1. Coat the slow cooker with cooking spray.
  2. Halved the lemon and cut the half into slices while reserving the other half.
  3. In a small bowl, squeeze the juice of the lemon half, sprinkle with pepper and salt and add the pesto. Mix well until blend.
  4. Place the salmon in the slow cooker and add the pesto mixture.
  5. Cover and cook for 2 to 3 hours on low heat.
  6. Garnish with lemon slices and serve.
