Ingredients

  • 26oz (730g) tomato passata (pureed tomatoes) (pureed tomatoes)
  • 3 oz (75g) pancetta or bacon diced
  • 1 onion finely chopped
  • 2 all-purpose potatoes cut into 1 cm ( inch) dice
  • 2 garlic cloves crushed
  • 3 cups chicken stock or vegetable stock
  • 1 carrot diced
  • 1 celery cut into half (sliced)
  • 15 oz (400g) tinned cannellini beans drained and rinsed
  • 1 handful Italian parsley roughly chopped
  • 3 oz (75g) green beans cut into 2 cm ( inch) pieces
  • 1 handful basil torn 
  • 3 oz (75g) English spinach leaves shredded
  • grated Parmesan cheese to serve

Steps:

  • Place the garlic, onion, carrot, celery, pancetta, potato, tomato passata, stock and 3 cups of water in the slow cooker.
  • Cook for 8 hours on Low.
  • In a heatproof bowl, put the pasta and cover with boiling water. Leave to soak for about 10 minutes. Drain.
  • Add the pasta to the slow cooker.
  • Stir in the spinach, green beans and cannellini beans.
  • Remove the lid and cook for another 30 minutes.
  • Add the parsley and basil then sprinkle with salt and pepper.
  • Pour the soup into the serving bowls.
  • Add the Parmesan and serve.
