Ingredients

  • 12 oz (340g) bok choy (pak choy) sliced
  • 17 oz (500g) ground pork
  • 4 scallions chopped finely
  • 1 egg white
  • 2 teaspoons sugar
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon Chinese rice wine
  • 3 cups chicken stock
  • 4 oz (110g) dried rice vermicelli noodles
  • 1 teaspoon sesame oil
  • 1 tablespoon light soy sauce
  • white pepper

Steps:

  • Process the egg white and pork in a food processor until smooth and fluffy.
  • In a large bowl, mash the pork and stir the egg white gradually and beat.
  • Divide the mixture into small balls (walnut size)
  • In a slow cooker, place the mixture and pour in the stock.
  • Cook for 2 hours on Low.
  • Add the bok choy and cook for another 10 minutes.
  • In a heatproof bowl, place the vermicelli noodles and cover with boiling water. Leave to soak for 10 minutes.
  • Drain the vermicelli and add into the slow cooker.
  • Pour the soup in the serving bowls with meatballs.
