Fragrant Spiced Chicken

Heat oil in a skillet or a large frying pan over medium heat.
Add the chicken and cook for 8 to 10 minutes until brown on all

Spread in the bottom of a 4 to 5L size slow cooker and place the
chicken on the top.
Combine chickpeas, diced tomatoes, oregano and salt in a large
bowl and pour over chicken. No need to stir.
Cover and cook for 8 to 9 hours over low heat or 4 to 5 hours
over high heat.
Add potato flakes, spinach and lemon zest. Stir gently. Cover
and heat over high heat for 1 to 2 minutes until spinach is wilted.
