Cooking time: 8-10 hours on LOW or 4-5 hours on HIGH


  • 45og (1 lb) baby carrots
  • 450g (1 lb) red baby potatoes larger ones cut in half
  • 1 tablespoon whole black peppercorns
  • 1 medium Swede, cut into 2.5cm (1 inch) cubes
  • 2 cups onion, chopped
  • 900g (2 lbs) corned beef brisket
  • 4 cups water
  • 2 bay leaves


  1. In 5 to 7L slow cooker, layer the carrots, potatoes, Swede and onion, in order given.
  2. Put corned beef brisket on top, fat-side up.
  3. Add bay leaves, peppercorns and water. Do not stir. Cover and cook for 8 to 10 hours on Low or 4 to 5 hours on High.
  4. Remove and discard bay leaves.
  5. Place the corned beef in a large serving platter. Cut into thin slices.
  6. Using a slotted spoon, remove vegetable from slow cooker and transfer into a large serving bowl.
  7. Serve with corned beef.
