  • 1 tablespoon cooking oil
  • 1 onion peeled and thinly sliced
  • 1 garlic cloves crushed
  • 1 green pepper cored, seeded and thinly sliced
  • 1.5 lb (700 g) cod fillet skinned and cut into 2 cm (1") wide strips
  • 14 oz (400g) tomatoes chopped, with their Juice
  • teaspoon dried basil
  • 12 black olives stoned
  • salt
  • ground black pepper


  • Heat the oil in a frying pan. Add the onion, garlic and green peppers and fry until lightly browned.
  • Transfer to the stoneware pot, draining well.
  • Add the fish to the frying pan and brown very lightly. Lay the fish on top of the vegetables in the stoneware pot.
  • Add the tomatoes, basil, olives and salt and pepper to taste to the pot.
  • Cover and cook on Low for 4-6 hours or High for 2-3 hours.
  • Taste and adjust the seasoning, then serve with thickly sliced French bread or boiled potatoes.
