Cooking time: 4 hours on  Low setting


  • 380 g (13.5 oz) coconut milk
  • 1 kg (2 lb) skinless, boneless chicken breasts, cubed
  • 1 clove garlic, minced
  • 2 potatoes, peeled and cubed
  • 1 cup chicken broth
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 tablespoon flaked coconut
  • 1 tablespoon raisins
  • 1 tablespoon cornstarch
  • cup curry powder
  • teaspoon ground black pepper
  • teaspoon salt


  1. Place the chicken in the slow cooker.
  2. Add the garlic, potatoes, chicken broth, onion, salt and black pepper.
  3. Pour in the coconut milk.
  4. Cover and cook for 4 hours over low heat.
  5. Add the red bell pepper and cook for another 45 minutes.
  6. Stir in the cornstarch and cook for another 15 minutes.
  7. Sprinkle with coconut flakes and raisins.
  8. Serve.
