Slow Cooker Coconut and Green Curry Pork

Slow Cooker Coconut and Green Curry Pork

  • 2 lb (900g) butt or shoulder of pork
  • 2 lb (900g) red potatoes peeled and cubed
  • 1 can Thai green curry paste
  • 1 tablespoon vegetable oil
  • kosher salt
  • 1 can coconut milk
  • Freshly-ground black pepper
  • cilantro leaves and stems chopped, to garnish (optional)


  • Halved the pork and divide the half into two to make it four.
  • Sprinkle with pepper and salt then place in a baking pan.
  • In a pre-heated broiler, place the pan with the pork and broil for 15 - 20 minutes until browned on all sides.
  • In a slow cooker, arrange the cut potatoes at the bottom and sprinkle with pepper and salt.
  • Meanwhile, in a large skillet with vegetable oil, fry the curry paste for 3 - 5 minutes over medium heat.
  • Pour in the coconut milk and cook for few minutes more.
  • Take the pork off the broiler and drain.
  • Place the pork in the slow cooker with potatoes.
  • Pour in the  coconut milk mixture and green curry.
  • Cover and cook for 6 to 8 hours over low heat until pork is tender.
  • Add soy sauce and salt to taste.
  • Garnish with chopped cilantro and serve.
