Ingredients:
- 1 kg (2 lbs) butt or shoulder of pork
- 1 kg (2 lbs) red potatoes, peeled and cubed
- 1 can of Thai green curry paste
- 1 tablespoon vegetable oil
- Kosher salt
- 1 can of coconut milk
- Freshly-ground black pepper
- chopped cilantro to garnish (optional)
Steps:
- Halved the pork and divide the half into two to make it four.
- Sprinkle with pepper and salt then place in a baking pan.
- In a pre-heated broiler, place the pan with the pork and broil
for 15 - 20 minutes until browned on all sides.
- In a slow cooker, arrange the cut potatoes at the bottom and
sprinkle with pepper and salt.
- Meanwhile, in a large skillet with vegetable oil, fry the curry
paste for 3 - 5 minutes over medium heat.
- Pour in the coconut milk and cook for few minutes more.
- Take the pork off the broiler and drain.
- Place the pork in the slow cooker with potatoes.
- Pour in the coconut milk mixture and green curry.
- Cover and cook for 6 to 8 hours over low heat until pork is
tender.
- Add soy sauce and salt to taste.
- Garnish with chopped cilantro and serve.
