Ingredients

  • 2 tablespoons (all-purpose) plain flour
  • 1 tablespoon cooking oil
  • 1 lb (500g) chicken thighs cut into half (boneless)
  • 1 cup red capsicum chopped
  • 1 lb (500g) diced tomatoes in can (with juice)
  • 1 cup corn kernels
  • teaspoon salt
  • 3 tablespoons sour cream
  • ⅔ cup chopped onions
  • 1 smoked jalapeno chilli chopped
  • 2 tablespoons fresh coriander chopped

Steps:

  • Put the flour in a large resalable freezer bag. Add the chicken, seal and toss until coated.
  • Heat oil in a large frying pan over medium heat.
  • Add chicken and cook for 8 to 10 minutes until browned on all sides.
  • Transfer to 1.5L slow cooker.
  • Add the flour, diced tomatoes, red capsicum, corn kernels, onion, and jalapeno chilli. Stir thoroughly.
  • Cover and cook for 8 to 10 hours over low heat or 4 to 5 hours over high heat.
  • Add coriander and sour cream. Stirring occasionally.
  • Cover and cook for 5 minutes over high heat.
  • Serve immediately.
  • Note: Prepare tomato mixture, the night before. Place it in a covered bowl and chill overnight. Prepare and cook as directed.
