Cooking time: 7-8 hours on  Low setting


  • 1 kg (2 lb) boneless, chicken thighs (skinless)
  • 4 cloves of garlic, chopped
  • 2 tablespoons curry powder
  • 2 scallions, sliced
  • 1 tablespoon grated ginger
  • 1 teaspoon ground cumin
  • 1 onion, chopped
  • 1 cups long-grain white rice
  • 1/3 cup tomato paste
  • cup plain whole-milk Greek yogurt
  • kosher salt
  • black pepper


  1. Place the garlic, ginger, cumin, curry powder and tomato paste.
  2. Pour in the cup water.
  3. Add the onion and mix well until combined.
  4. Add the chicken, 1 teaspoon salt and teaspoon of pepper.
  5. Cover and cook for 7 to 8 hours over high heat or 3 to 4 hours over high.
  6. Meanwhile cook the rice according to the package directions.
  7. Before serving add teaspoon salt and yogurt. Stir to combine.
  8. Sprinkle with scallions and serve with rice.
