Served with asparagus or broccoli and toasted garlic bread, this simple dish brings a hint of Italy to your kitchen. A side of sautéed mushrooms is also delicious with this dish. If you’re having wine with dinner, try a Riesling, or an Australian Zweigelt.


  • 7 cups hot water
  • 2 cups polenta (Use the slow cooking kind, not quick-cooking.)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons salt
  • ½ teaspoon ground pepper
  • 3 cups shredded sharp cheddar cheese


  • In slow cooker, mix together water, polenta, olive oil, salt, and pepper until blended.
  • Stir in cheese.
  • Cover and cook on High setting for 2 hours, or until most of the liquid is absorbed.
  • Stir well. When it’s done, it should have a consistency similar to thick cooked cereal.
