I made the carrot cake.....was a bit sweet ....so nxt time i'll add less sugar. I also used self raising flour which worked ok. Nxt time i'll use the suggested way to see if it makes a difference. It just seemed to need something else whether its a few nuts or raisins........

is the flour plain flour? could you use self raising flour instead? I think using orange juice instead of water would be good going to go and have a go now. never used a slow cooker before last night when I cooked a brisket of beef it was delicious

Do not attempt marmalade or jam in slow cooker. Both need to fast boil to reach setting point!

Carrot cake is so delicious – well worth the effort of grating the carrots. You can serve this slow cooker version with whipped cream, or with cream cheese frosting. There are now some excellent pre-packaged cream cheese frostings available at the supermarket. If your children haven’t tried carrot cake, they won’t believe they’re eating carrots!

Ingredients

  • 1 cup sugar
  • 2 egg
  • ¼ cup water
  • ⅓ cup vegetable oil
  • 1 ½ cups flour
  • 1 teaspoon flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup grated carrots
  • Whipped topping

Steps:

  • If starting with whole carrots, peel and grate them until you have 1 cupful.
  • Using a large mixing bowl, cream together sugar, eggs, water, and oil.
  • Mix in flour, vanilla, baking powder, baking soda, and cinnamon. Only blend until everything is combined.
  • Use a spoon to stir in the grated carrots until evenly distributed.
  • Spray inside of slow cooker with non-stick cooking spray.
  • Pour in batter and spread it evenly in the slow cooker.
  • Place a thickness of 4 or 5 paper towels across the top of the slow cooker and place slow cooker lid on top of the paper towels.
  • Cook on Low setting for 2 hours and 15 minutes, or until toothpick inserted in center comes out clean.
  • Serve with whipped cream when cool.
