Preparation time: 45 minutes (less if you use pre-shredded carrots)
Slow Cooker Size 3.5L+
Serves: 6-8
Cooking time: 2 hours and 15 minutes on LOW setting

Carrot cake is so delicious – well worth the effort of grating the carrots. You can serve this slow cooker version with whipped cream, or with cream cheese frosting. There are now some excellent pre-packaged cream cheese frostings available at the supermarket. If your children haven’t tried carrot cake, they won’t believe they’re eating carrots!


  • 1 cup sugar
  • 2 eggs
  • ¼ cup water
  • ⅓ cup vegetable oil
  • 1 ½ cups flour
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup grated carrots
  • Whipped topping


  1. If starting with whole carrots, peel and grate them until you have 1 cupful.
  2. Using a large mixing bowl, cream together sugar, eggs, water, and oil.
  3. Mix in flour, vanilla, baking powder, baking soda, and cinnamon. Only blend until everything is combined.
  4. Use a spoon to stir in the grated carrots until evenly distributed.
  5. Spray inside of slow cooker with non-stick cooking spray.
  6. Pour in batter and spread it evenly in the slow cooker.
  7. Place a thickness of 4 or 5 paper towels across the top of the slow cooker and place slow cooker lid on top of the paper towels.
  8. Cook on Low setting for 2 hours and 15 minutes, or until toothpick inserted in center comes out clean.
  9. Serve with whipped cream when cool.
