Ingredients:

  • 500 ml (17 fl oz) chicken stock
  • 1.6 kg (3 lb) pork shoulder
  • 5 garlic cloves
  • 5 tablespoons rice wine
  • 2 tablespoons vegetable oil
  • 1 tablespoon dark soy sauce (for colour)
  • 5 tablespoons light soy sauce (for flavour)
  • 1 red chilli, deseeded and chopped finely
  • root ginger, about thumb size
  • 1 teaspoon five-spice powder
  • 6 ripe plums, cut in half and stoned
  • a bunch of spring onions, sliced finely
  • 1 cinnamon stick
  • 2 star anise
  • 1 tablespoon tomato puree
  • 2 tablespoons sugar
  • 2 tablespoon tomato puree

Steps:

  1. The pork should be cut in big pieces which is about the length of a thumb.
  2. Place the pieces of pork in a bowl.
  3. Add the soy sauces, wine, half the chilli, half the garlic and half the ginger.
  4. Marinate for about 1 hour.
  5. Meanwhile, in a large pan with oil, cook the remaining ginger, spring onions, garlic, chilli, star anise, cinnamon five, spice, 2 tablespoon puree and sugar.
  6. Add the pork and fry together with the mixture.
  7. Transfer into a slow cooker.
  8. Pour in the marinade.
  9. Cover and cook on low for 8-9 hours.
  10. Remove the fat on the surface.
  11. At about 1 hour before fully cooked, add the plums and stir.
  12. Remove the plums and the meat, then turn up the heat and boil the sauce for about 5-10 minutes until syrupy.
  13. Place everything in a pan and cook until heated through. 
  14. Spread the spring onions on top.
  15. Serve.
