Ingredients

  • 12 cups chicken stock (prepared chicken or vegetable broth)
  • 500 ml (16 fl oz) bag of dry coleslaw mix
  • 1 cup onion finely chopped
  • 1 cup celery chopped
  • 1 cup carrot diced
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • teaspoon pepper
  • 2 cans at least 14 oz (400g) stewed tomatoes with juice
  • 2 cups smoked ham sausage chopped
  • boiling water
  • 2 cups dried mixed beans

Steps:

  • Place the beans into a large bowl. Add boiling water about 5 cm (2 inches) above beans.
  • Cover and let stand for 1 hour until cool.
  • Drain and rinse well then transfer to 7L slow cooker.
  • Add liquid chicken, coleslaw, onion, celery, carrot, marjoram, thyme, bay leaf and pepper. Stir well.
  • Cover and cook for 10 to 12 hours on low or 5 to 6 hours on high. Remove and discard bay leaf.
  •  Add sausage and tomatoes. Stir thoroughly.
  • Cover and cook for 20 minutes on high until heated through.
