Slow Cooker Size 7L+

Cooking time: 10-12 hours on Low or 5-6 hours on High

Ingredients:

  • 12 cups liquid chicken stock (prepared chicken or vegetable broth)
  • 500 ml (16 oz) bag of dry coleslaw mix
  • 1 cup onion, finely chopped
  • 1 cup celery, chopped
  • 1 cup carrot, diced
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • teaspoon pepper
  • 2 cans at least 400g (14 oz) each stewed tomatoes with juice
  • 2 cups smoked ham sausage, chopped
  • Boiling water
  • 2 cups dried mixed beans

Steps:

  1. Place the beans into a large bowl. Add boiling water about 5 cm (2 inches) above beans.
  2. Cover and let stand for 1 hour until cool.
  3. Drain and rinse well then transfer to 7L slow cooker.
  4. Add liquid chicken, coleslaw, onion, celery, carrot, marjoram, thyme, bay leaf and pepper. Stir well.
  5. Cover and cook for 10 to 12 hours on low or 5 to 6 hours on high. Remove and discard bay leaf.
  6.  Add sausage and tomatoes. Stir thoroughly.
  7. Cover and cook for 20 minutes on high until heated through.
